Mango Chia Overnight Oats

Wake up to a burst of tropical flavor with our Mango Chia Overnight Oats. Creamy chia pudding meets mango-infused oats, topped with fresh fruit and bee pollen for a nutritious breakfast treat that's as easy to make as it is delicious.

INGREDIENTS
Chia Pudding
¼ cup chia seeds
1 cup almond milk
½ cup greek yogurt
2 tbsp maple syrup
1 tsp vanilla extract
Overnight Oats
¾ cup fresh mango, cubed
¾ cup almond milk
2 tbsp maple syrup
1 cup Purely Elizabeth Vanilla Pecan Superfood Oatmeal with Collagen
Pinch of sea salt
Toppings
Fresh mango
Fresh pineapple
Bee pollen
DIRECTIONS
1. Prepare chia pudding by adding all the ingredients to a bowl and stirring until well combined. Cover and refrigerate for 2 hours.
2. Make the overnight oats by adding the mango and almond milk to a blender. Blend until smooth.
3. Combine the mango milk, oats, maple syrup and salt in a bowl. Cover and chill for 2 hours.
4. When ready to serve, layer the chia pudding, mango oats and toppings in a serving glass.
