- Prepare a skillet with olive oil over medium heat. Once hot, add the peppers and zucchini and cook for 4-5 minutes or until tender. Transfer to a bowl.
- Whisk the eggs and milk in until fluffy and then add the eggs to the hot skillet and cook until lumpy and slightly wet.
- Lay a tortilla flat and covering only half of the tortilla, sprinkle with half of the cheese, the eggs, veggies and avocado. Top with remaining cheese and then fold over the tortilla.
- Add the tortilla to the hot skillet and cook for 2-3 minutes on each side until golden brown.
- Cut in half and serve with toppings.
