Start your day with a savory twist thanks to this delicious Breakfast Quesadilla. Filled with fluffy eggs, vibrant veggies, creamy avocado, and melted cheddar cheese, all nestled in a warm tortilla, this quesadilla is a flavor-packed breakfast. 

Ingredients

1 tbsp olive oil

¼ red bell pepper, diced

¼ zucchini, diced

2 eggs

2 tbsp unsweetened almond milk (non-vanilla)

1 flour tortilla

½ cup cheddar cheese

¼ avocado, sliced

Salt and pepper to taste

Toppings

Arugula

Pico de gallo

Plain greek yogurt

Green salsa

Cilantro

Directions

  1. Prepare a skillet with olive oil over medium heat. Once hot, add the peppers and zucchini and cook for 4-5 minutes or until tender. Transfer to a bowl.
  2. Whisk the eggs and milk in until fluffy and then add the eggs to the hot skillet and cook until lumpy and slightly wet.
  3. Lay a tortilla flat and covering only half of the tortilla, sprinkle with half of the cheese, the eggs, veggies and avocado. Top with remaining cheese and then fold over the tortilla.
  4. Add the tortilla to the hot skillet and cook for 2-3 minutes on each side until golden brown.
  5. Cut in half and serve with toppings.
